  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened to room temperature)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Crush biscoff cookies and mix with melted butter. Press into a springform pan and bake for 10 minutes.
  3. Toss apple slices with brown sugar, cinnamon, and cornstarch.
  4. Beat cream cheese until smooth; add remaining cheesecake ingredients and mix until combined.
  5. Layer half of the cheesecake mixture over the crust, followed by half of the apple filling; repeat layers.
  6. Prepare streusel topping by mixing melted butter, flour, brown sugar, and oats until crumbly; sprinkle on top.
  7. Bake for about 85 minutes or until set but slightly jiggly in the center; cool gradually before refrigerating.
