  • 150 g granulated sugar (for apples)
  • 2 kg Fuji, Royal Gala, or Pink Lady apples
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch (for custard)
  • 600 ml milk (dairy or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat oven to 180°C (350°F). Peel and slice apples thinly. Toss with sugar, salt, and cornstarch.
  2. Spread apple mixture in a baking dish and bake for about 40 minutes until tender. Allow them to cool slightly.
  3. In a bowl, whisk egg yolks, sugar, cornstarch, and salt until smooth. Heat milk until just below boiling, then gradually mix it into the egg mixture.
  4. Return the mixture to heat and stir continuously until thickened.
  5. Layer baked apples and custard in a serving dish or individual glasses. Chill if desired before serving.
