Instructions
- In a large pot, heat olive oil over medium-high heat. Add the chicken sausage and cook until browned, about 5-7 minutes. Remove from pot.
- In the same pot, sauté diced onion, carrots, and celery until tender (about 5 minutes). Stir in garlic and Italian seasoning; cook for 1 minute.
- Pour in chicken broth and diced tomatoes; return sausage to pot. Bring to a boil, then reduce heat to simmer for 20 minutes.
- Add tortellini and cook according to package instructions (7-9 minutes). Stir in spinach leaves until wilted (1-2 minutes).
