Ingredients
- 2 eggs
- 1 cup fresh spinach
- 1 cup diced sweet potato
- Sliced avocado
- 1 tbsp pickled jalapeños
- 1 tsp olive oil
- Salt, black pepper & chili flakes to taste
Instructions
- Boil the eggs in a pot of water for exactly 7 minutes for jammy yolks. Transfer them to ice water to cool before peeling.
- Preheat the oven to 200°C (400°F). Toss diced sweet potatoes in olive oil, salt, and pepper, then roast on a baking tray for 20-25 minutes until tender.
- In a nonstick pan, heat olive oil over medium heat and sauté spinach with a pinch of salt until wilted (about 2 minutes).
- Assemble by layering sautéed spinach, roasted sweet potatoes, sliced avocado, and halved jammy eggs on a plate. Top with chili flakes and black pepper.
- Finish with pickled jalapeños before serving warm.
