  • ¼ cup packed light brown sugar

  • 1 tablespoon cornstarch
  • 1 tablespoon honey
  • 2 tablespoons unsalted butter (melted)
  • ½ cup unsalted butter (room temperature)
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 3 large egg yolks (room temperature)
  • 2 teaspoons vanilla paste or extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

Instructions

  1. Prepare the rose sugar by grinding dried roses with granulated sugar until finely mixed; set aside.
  2. For the filling, pulse pistachios until finely ground and mix with brown sugar, cinnamon, and cornstarch; stir in honey and melted butter.
  3. Cream room temperature butter with both sugars until fluffy, then add egg yolks and vanilla.
  4. Combine dry ingredients into the mixture until just incorporated into a dough.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop cookie dough onto sheets, flatten slightly, add filling, and shape into balls.
  7. Roll in rose sugar before flattening again and baking for about 8–10 minutes.
