- 1/2 onion, diced
- 1 tbsp extra-virgin olive oil
- 1 1/2 cups organic heavy cream

- 1 tsp sea salt, plus more as needed
- 1 tsp all-purpose seasoning blend
- 1/2 tsp smoked paprika
Instructions
- Preheat your oven to 400°F (200°C). Spread tomato wedges and unpeeled garlic on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for about 20 minutes until caramelized.
- In a large pot over medium heat, sauté diced onions until translucent (about 5 minutes).
- Squeeze roasted garlic cloves into the pot, add roasted tomatoes, tomato paste, vegetable broth, salt, all-purpose seasoning blend, and smoked paprika. Blend until smooth using an immersion blender.
- Stir in heavy cream over low heat without boiling. Adjust seasoning if necessary.
