  • 150 g softened unsalted butter
  • 150 g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 85 ml buttermilk
  • 165 g self-raising flour
  • 1.5 tbsp cocoa powder
  • 200 g strawberry or raspberry jam
  • 200 g softened unsalted butter (for icing)
  • 400 g icing sugar
  • Pink food coloring

Instructions

  1. Preheat oven to 160C Fan/180C/350F/Gas Mark 4 and line a cupcake tin.
  2. In a mixing bowl, whisk together butter and sugar until fluffy using an electric mixer.
  3. Add eggs and vanilla, mixing until combined.
  4. Stir in buttermilk, cocoa powder, bicarbonate of soda, red food coloring, and self-raising flour until just combined.
  5. Pour batter into cupcake cases evenly and bake for 20-25 minutes until a skewer comes out clean.
  6. Cool completely before coring each cupcake and filling with jam.
  7. For icing, beat softened butter then add icing sugar, milk, vanilla extract, and pink food coloring until smooth.
  8. Pipe icing onto each cupcake in a brain-like pattern.
