  • 3/4 cup Milk

Instructions

  1. Prepare a large stockpot by placing metal cookie cutters or folded tin foil at the bottom to prevent direct contact with the pudding mold. Boil water and grease your pudding mold generously.
  2. In a food processor, blend flour, baking powder, salt, and suet/butter until it resembles coarse sand. Transfer to a mixing bowl.
  3. Add milk, lemon zest, vanilla extract, and currants to dry ingredients; stir until combined. Pour the batter into the greased mold and secure the lid tightly.
  4. Lower the pudding mold into boiling water, ensuring water reaches halfway up its sides. Reduce heat to simmer and cook undisturbed for about 90 minutes.
  5. Once cooked, remove from water and let sit for 15 minutes before inverting onto a plate. Slice and serve warm with English custard sauce.
