  • 2 cups broccoli florets
  • 2 cups sliced mushrooms

  • 2 minced garlic cloves
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook rice in salted water until tender.
  2. In a skillet or wok, heat olive oil over medium-high heat and sauté diced chicken until browned and cooked through; set aside.
  3. In the same skillet, add sesame oil, onions, and garlic; sauté until fragrant.
  4. Add broccoli and mushrooms; cook until tender-crisp.
  5. Return chicken to the skillet, pour in soy sauce, and stir well. Mix cornstarch with water for a slurry, add it to the pan, and simmer until sauce thickens.
