  • 6 rashers smoked turkey bacon
  • 12 chipolata sausages
  • 2 onions
  • 200g sage and onion stuffing
  • 200g Brussels sprouts
  • Oil for roasting

Instructions

  1. Preheat the oven to 220°C (200°C fan).
  2. In a large bowl, sift the flour and create a well. Beat together eggs and milk, pour into the well, and mix until smooth. Stir in mustard, salt, and pepper.
  3. Prepare pigs in blankets by wrapping turkey bacon around each sausage.
  4. Heat oil in a roasting tin; add pigs in blankets, onion wedges, and stuffing balls. Roast for about 20 minutes until golden.
  5. For the gravy, sauté sliced onions with butter and olive oil until tender, stir in flour, then gradually add chicken stock. Simmer for 10 minutes.
  6. Add Brussels sprouts and leeks to the tin, then pour batter over everything. Bake for another 20–25 minutes until puffed and golden.
  7. Serve hot with onion gravy drizzled on top alongside cranberry sauce.
