  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp chili flakes (optional)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ cup plain yogurt, room temperature

Instructions

  1. 1. Heat vegetable oil in a heavy-bottomed pot over medium heat. Sauté chopped onion until translucent.
  2. 2. Add minced garlic and grated ginger; cook until fragrant.
  3. 3. Stir in curry powder, cumin, and optional chili flakes; cook for an additional minute.
  4. 4. Brown the beef stew meat on all sides, about 5-7 minutes.
  5. 5. Add chickpeas, coconut milk, beef broth, tomato paste, salt, and pepper; stir well and bring to a gentle simmer.
  6. 6. Cover partially and simmer on low heat for 45 minutes to an hour until the beef is tender.
