  • 2 tablespoons coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1 teaspoon turmeric
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Salt & black pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion, mincing garlic, and grating ginger.
  2. In a large pot or Dutch oven, heat coconut oil over medium heat. Sauté the onion until translucent, then add garlic and ginger until fragrant.
  3. Stir in red curry paste, cumin, cinnamon, turmeric, and chili flakes (if using) for about 2 minutes.
  4. Increase heat to medium-high and brown the beef chunks on all sides for approximately 5-7 minutes.
  5. Pour in coconut milk and beef broth; add salt and pepper to taste. Bring to a simmer.
  6. Reduce heat to low, cover the pot, and braise for 2-3 hours until the beef is tender.
