  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel filling by mixing flour, brown sugar, cinnamon, salt, and softened butter in a bowl until crumbly; refrigerate.
  2. Preheat the oven to 400°F (200°C) and prepare baking sheets.
  3. Combine all dry ingredients in a large bowl.
  4. Cream cubed butter and sugars in a stand mixer until smooth, then add egg and vanilla.
  5. Gradually mix in the dry ingredients until just combined.
  6. Shape cookie dough into balls and make indents; fill with streusel mixture.
  7. Bake for 8-11 minutes until edges are golden; cool slightly before drizzling with icing.
