- 1 tsp. cornstarch
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 8 Tbsp. cold butter, unsalted, cut into cubes
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 tsp. vanilla extract
- 1 large egg
- 1 large egg yolk
- 2 Tbsp. unsalted butter, melted
- 3 Tbsp. heavy cream or milk
- 1 cup powdered sugar, sifted
- 1 tsp. vanilla
- pinch salt
Instructions
- Prepare the streusel filling by mixing flour, brown sugar, cinnamon, salt, and softened butter in a bowl until crumbly; refrigerate.
- Preheat the oven to 400°F (200°C) and prepare baking sheets.
- Combine all dry ingredients in a large bowl.
- Cream cubed butter and sugars in a stand mixer until smooth, then add egg and vanilla.
- Gradually mix in the dry ingredients until just combined.
- Shape cookie dough into balls and make indents; fill with streusel mixture.
