- 250 g all-purpose flour
- 110 g whole milk
- 1 large egg
- 50 g sugar
- Pinch of salt
- 20 g unsalted butter
- 80 g unsalted butter (for layering)
- 3 g dry yeast (or 9 g fresh yeast)
- 1 tablespoon orange marmalade
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine flour and yeast; add egg, milk, vanilla, and orange marmalade. Mix until incorporated and let rest for 10 minutes.
- Add sugar and salt; mix until absorbed and rest for another 10 minutes.
- Incorporate 20g of butter until smooth; refrigerate for one hour.
- Roll dough into a rectangle (50×30 cm), spread softened remaining butter over it.
- Fold dough into sections and chill again for one hour.
- Roll out to (20×35 cm) rectangle; cut triangles.
- Roll each triangle tightly into cornetti shape on a baking sheet lined with parchment paper.
- Brush with egg wash, sprinkle with sugar, cover to rise.
- Preheat oven to 180°C (350°F) and bake for about 20 minutes until golden brown.
