  • 1 lb boneless, skinless chicken breast
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 oz cream cheese
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Crushed red pepper flakes (optional)
  • Fresh parsley, chopped

Instructions

  1. Boil salted water in a large pot. Cook penne pasta until al dente; add broccoli during the last 2 minutes of cooking. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden brown; remove from skillet.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Stir in heavy cream and chicken broth; add cream cheese until smooth.
  4. Mix in Parmesan cheese and mozzarella until creamy; season to taste.
  5. Combine cooked pasta, broccoli, and chicken into the sauce; mix well to coat.
  6. Serve garnished with fresh parsley.
