Ingredients
- 2 small uncooked chicken breasts (360g/12.7oz)
- 75g (2.5oz) uncooked lean smoked back Turkey Bacon
- 3.5 cups (840ml) low sodium chicken stock
- 500g (17.5oz) potato gnocchi
- 1 shallot, finely diced
- 2 cloves garlic, minced
- ½ cup (120ml) 2% milk
- 175g laughing cow light or light cream cheese
- 60g (2.2oz) cheddar cheese, freshly grated
Instructions
- Cook the chicken in chicken stock for 10–12 minutes until fully cooked. Slice and set aside.
- In a frying pan, crisp the diced Turkey Bacon until golden brown.
- Sauté shallots until soft; add garlic and cook for another 30 seconds.
- Add remaining stock, milk, lemon juice, herbs, and cheese to the pan; whisk until smooth.
- Stir in sliced chicken and gnocchi; simmer for about 5 minutes until gnocchi are tender.
- Transfer to an ovenproof dish; top with cheddar cheese and broil until melted.
