Instructions

  1. Cook rotini in salted boiling water until al dente (about 8-10 minutes). Drain and reserve one cup of pasta water.
  2. Season chicken with Cajun and Italian seasonings. In a skillet, heat olive oil over medium-high heat and sear chicken until golden-brown (4-5 minutes per side). Remove from skillet.
  3. Lower heat to medium. Add butter and minced garlic to the skillet; sauté for one minute until fragrant.
  4. Pour in heavy cream and stir well. Add Velveeta cubes and let melt before adding mozzarella and Parmesan cheese. Stir until the sauce is smooth; adjust consistency with reserved pasta water as needed.
  5. Toss cooked rotini in the sauce until well coated. Let simmer on low heat for two more minutes.
  6. Serve by plating creamy rotini alongside seared chicken pieces and garnish with fresh parsley.
