  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup cooked white rice
  • 1 cup heavy cream
  • 2 tbsp basil pesto
  • 1 garlic clove, minced

Instructions

  1. Cook white rice according to package instructions and keep warm.
  2. Steam broccoli florets for about 4-5 minutes until bright green and tender-crisp; set aside.
  3. Season salmon chunks with salt and pepper. Heat olive oil in a skillet over medium-high heat, then sear salmon for about 2-3 minutes per side until lightly golden; remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant, then stir in heavy cream, basil pesto, and optional Parmesan cheese; simmer gently for about 2 minutes until slightly thickened.
  5. Add seared salmon and steamed broccoli to the sauce, tossing gently to coat everything evenly. Serve over fluffy white rice.
