  • Green bell pepper
  • Beef steak (or top round)
  • Onion
  • Carrot
  • Celery
  • Garlic
  • All-purpose flour
  • Worcestershire sauce
  • Hot sauce
  • Beef broth
  • Heavy cream
  • White cheddar cheese
  • Provolone cheese
  • Fresh parsley

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté sliced bell pepper for 2 minutes, then add beef and cook until browned. Remove and set aside.
  2. In the same pot, add more olive oil and sauté onion, carrot, and celery for 3–5 minutes. Add garlic and cook for another 30 seconds.
  3. Sprinkle in flour, then add Worcestershire sauce and hot sauce; season with salt and pepper. Cook for about 1 minute.
  4. Pour in beef broth and optional bouillon cube. Bring to a boil, then simmer for 15 minutes until vegetables are tender. Blend until smooth with an immersion blender.
  5. Stir in heavy cream and both cheeses; let simmer for 5 minutes before mixing in half of the reserved beef mixture.
  6. For croutons, toss bread cubes with olive oil, salt, and pepper; bake at 400°F for 7–10 minutes until golden brown.
  7. Serve soup topped with remaining beef mixture, croutons, and parsley.
