- White cheddar cheese

Instructions
- Heat olive oil in a Dutch oven over medium-high heat. Sauté sliced bell pepper for 2 minutes, then add beef and cook until browned. Remove and set aside.
- In the same pot, add more olive oil and sauté onion, carrot, and celery for 3–5 minutes. Add garlic and cook for another 30 seconds.
- Sprinkle in flour, then add Worcestershire sauce and hot sauce; season with salt and pepper. Cook for about 1 minute.
- Pour in beef broth and optional bouillon cube. Bring to a boil, then simmer for 15 minutes until vegetables are tender. Blend until smooth with an immersion blender.
- Stir in heavy cream and both cheeses; let simmer for 5 minutes before mixing in half of the reserved beef mixture.
- For croutons, toss bread cubes with olive oil, salt, and pepper; bake at 400°F for 7–10 minutes until golden brown.
- Serve soup topped with remaining beef mixture, croutons, and parsley.
