  • 1/2 cup granulated white sugar (for the brulee topping)

Instructions

  1. For the pastry cream, heat milk and half the sugar until steaming. Whisk egg yolks, remaining sugar, salt, vanilla bean paste, and cornstarch in a bowl. Gradually mix in hot milk. Return to heat until thickened; stir in butter and cool.
  2. Preheat oven to 350°F (175°C). Beat butter and sugars until fluffy. Add egg and vanilla; combine. Whisk flour, baking powder, and salt; mix into wet ingredients.
  3. Roll dough into balls, coat with sugar, and bake for about 9 minutes until golden.
  4. Top warm cookies with pastry cream, sprinkle sugar on top, then caramelize using a kitchen torch.
