  • 1 red bell pepper, finely chopped

  • 1½ teaspoons Italian seasoning
  • 1½ teaspoons salt
  • 7 cups low-sodium chicken broth
  • 1½ cups dry ditalini pasta
  • 1 cup fresh spinach

Instructions

  1. In a large soup pot or Dutch oven over medium-high heat, brown the ground sausage with carrots, celery, onion, and bell pepper for about 5 minutes.
  2. Add minced garlic, Italian seasoning, and salt; cook for another minute.
  3. Pour in the chicken broth and scrape any bits off the bottom of the pot.
  4. Bring the mixture to a simmer; reduce heat to medium-low and cover. Cook for about 10 minutes until vegetables are nearly tender.
  5. Stir in ditalini pasta; cover again and cook for an additional 10 minutes until pasta is al dente.
