Ingredients
- 1 salmon fillet
- 1 tbsp butter
- 1 garlic clove, smashed
- tsp paprika
- Salt & pepper to taste
- 2 medium potatoes, peeled & diced
- 1 tbsp olive oil
- tsp garlic powder
- Salt & pepper to taste
- 1 cup baby carrots
- 1 tbsp butter
- 1 tsp honey or maple syrup
- Pinch of chili flakes (optional)
- 1 cup broccoli florets
- Pinch of salt
Instructions
- Preheat your oven to 400°F (200°C). Toss diced potatoes in olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden brown.
- Heat a skillet over medium heat, melt butter, and add smashed garlic. Season salmon with paprika, salt, and pepper. Cook skin-side down for 4–5 minutes on each side until fully cooked.
- Steam baby carrots for about 5 minutes until tender. Melt butter in a small pan, stir in honey (and chili flakes if desired), then toss the carrots in this glaze.
- Steam broccoli florets over boiling water for 3–4 minutes until bright green.
- Plate the salmon alongside the roasted potatoes, glazed carrots, and steamed broccoli.
