  • 1 large onion, diced
  • 4 stalks celery, diced
  • 1 large yellow bell pepper, diced

  • 8 cups low-sodium chicken broth
  • 1 pound carrots, diced
  • ⅓ cup uncooked pastina pasta
  • 3 cups rotisserie chicken
  • Grated Parmesan cheese (for serving)
  • Fresh herbs (rosemary, thyme, parsley)

Instructions

  1. Heat olive oil and butter in a Dutch oven over medium heat. Sauté onion, celery, bell pepper for 4-5 minutes until translucent. Add garlic and cook for an additional 2 minutes.
  2. Pour in chicken broth along with carrots and kosher salt. Bring to a boil then reduce heat and simmer for 20-25 minutes until vegetables are tender.
  3. Remove 2 cups of cooked vegetables; puree the remaining soup until smooth using a blender or immersion blender. Return reserved vegetables to the pot.
  4. Stir in pastina and cook according to package directions until al dente. Mix in shredded rotisserie chicken and cover for about 20 minutes off heat.
  5. Serve hot garnished with grated Parmesan cheese and fresh herbs.
