  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Cooking spray
  • 1/2 cup walnuts (coarsely chopped, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9 x 5 inch loaf pan by lining it with parchment paper and spraying it lightly with cooking spray.
  2. In a large mixing bowl, whisk together the egg, applesauce, honey (or maple syrup), cinnamon, baking soda, baking powder, and salt until well combined.
  3. Stir in the shredded zucchini until evenly distributed.
  4. Gently fold in the whole wheat or spelt flour using a spatula until just combined; do not overmix.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
