- 1 large sweet potato, sliced into rounds
- 1 tsp olive oil (for potatoes)
- Salt & optional spices
- 2 cups broccoli florets
Instructions
- Preheat your oven to 200C (400F).
- Rub chicken breasts with olive oil, salt, pepper, paprika, and garlic powder. Bake for 20-25 minutes until fully cooked, then slice.
- Toss sweet potato rounds with olive oil and salt, spread on a baking sheet, and roast for 25 minutes, flipping halfway through.
- Steam broccoli florets in a steamer basket over boiling water for about 5-6 minutes until tender-crisp.
- Assemble by dividing chicken, sweet potatoes, and broccoli into meal prep containers.
