Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter (softened)
  • 16 chocolate batons or 8 oz semi-sweet chocolate

Instructions

  1. In a stand mixer bowl, combine flour, sugar, salt, and yeast. Slowly add cold milk; mix until the dough is soft but slightly tacky. Cover and refrigerate for 30 minutes.
  2. Beat softened butter with flour until smooth; shape into a rectangle and chill for 30 minutes.
  3. Roll out the dough into a larger rectangle, encase the chilled butter layer inside, and seal edges tightly.
  4. Create layers by folding the dough into thirds and refrigerating after each turn for a total of three folds.
  5. Roll out again, cut into rectangles, place chocolate at one end, and roll tightly.
  6. Arrange on baking sheets to proof for an hour before baking.
  7. Preheat oven to 400°F (204°C), brush with egg wash, and bake for about 20 minutes until golden.
