  • ¾ cup whole milk (170g)
  • 2½ teaspoons instant yeast (9g)
  • ¼ cup granulated sugar (50g)
  • 5 cups bread flour (600g)
  • ½ cup whole wheat flour (60g)
  • 1½ teaspoons fine sea salt (10g)
  • 4 tablespoons softened unsalted European-style butter (56g)
  • 1¾ cups very cold unsalted European-style butter (395g)

Instructions

  1. In a stand mixer bowl, mix water, milk, yeast, and sugar until dissolved.
  2. Add both flours and salt; stir until a shaggy dough forms. Knead on medium speed for about 5-7 minutes until smooth.
  3. Chill the dough for 30 minutes wrapped in plastic wrap. Roll out softened butter between parchment paper into an 8-inch square.
  4. Roll out chilled dough into a larger rectangle and place the butter square in the center. Fold dough over to encase the butter completely.
  5. Roll out gently and perform a series of folds: fold in thirds like a letter; repeat two more times with chilling periods between each fold.
  6. Roll out to about ¼ inch thick and cut triangles; roll tightly from the base to tip to form croissants.
  7. Place on lined baking sheets, let rise until doubled, then preheat oven to 400°F (200°C).
  8. Brush with egg yolk mixed with heavy cream before baking for about 24 minutes or until golden brown.
