  • 1 onion (cut into wedges)
  • 1 can (8 oz) pineapple chunks (packed in juice)
  • 1/2 cup BBQ sauce
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 1 cup white rice
  • 1 cup water
  • 1 teaspoon oil (for rice)
  • 1/4 teaspoon salt (for rice)
  • 1/2 cup BBQ sauce (for thickening)
  • 2 teaspoons cornstarch
  • 2 tablespoons water (for thickening)

Instructions

  1. Set the Instant Pot to sauté mode. Add oil and diced chicken, seasoning with salt and pepper. Brown the chicken, then add onion and cook for another minute before turning off the pot.
  2. Stir in pineapple chunks with juice, BBQ sauce, and diced peppers.
  3. Place a trivet over the mixture. In an oven-proof dish, combine rice, water, oil, and salt; place this dish on top of the trivet.
  4. Close the lid and set the valve to sealing. Select pressure cook on high for 2 minutes. Allow for a natural pressure release of about 10 minutes before manually releasing any remaining pressure.
  5. Remove both the trivet and rice dish once opened. Fluff rice with a fork. Mix remaining BBQ sauce with cornstarch and water; stir into the pot until thickened.
