  • 50 g white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 tsp baking soda

  • 150 g all-purpose flour
  • 1 cup mangoes (diced)
  • 2 tbsp white sugar (for mango mixture)
  • 1 cup sweet rice
  • 0.5 cup coconut milk
  • 2 tbsp sweetened condensed milk (optional)

Instructions

  1. Rinse sweet rice under cold water until clear; soak for at least 4 hours or overnight.
  2. Cook soaked sweet rice with coconut milk in a pot over low heat for about 20 minutes until tender and sticky. Let cool.
  3. In a mixing bowl, cream together butter and sugars until fluffy; add egg and vanilla.
  4. In another bowl, combine baking soda, salt, and flour; mix into wet ingredients until just combined.
  5. Fold in diced mangoes and cooked sweet rice until evenly mixed.
  6. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  7. Drop spoonfuls of dough onto the sheet, spacing them apart.
  8. Bake for 12–15 minutes until edges are golden; allow cooling before transferring to a wire rack.
