Ingredients

Scale
  • 1 head green cabbage (cut into 8 wedges)
  • 3 tbsps olive oil
  • 2 tbsps butter
  • ½ cup finely diced red onion
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken broth
  • 4 oz. full-fat cream cheese (softened and cubed)
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes in oil (julienned)
  • 1 tsp dried oregano leaves
  • 1 tsp dried thyme leaves
  • ½ tsp dried rosemary leaves
  • 1 tsp table salt
  • ½ tsp black pepper
  • 1 tsp red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • chopped fresh parsley (for garnish)
  • extra Parmesan for serving (to taste)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the cabbage into wedges, keeping the core intact.
  3. In a cast iron skillet, heat olive oil over medium-high heat and sear the cabbage wedges until golden brown on both sides. Season with salt and pepper.
  4. Lower the heat, add butter, and sauté red onion until softened. Stir in garlic for additional flavor.
  5. Deglaze the pan with chicken broth, then whisk in cream cheese until smooth.
  6. Add heavy cream, sun-dried tomatoes, and herbs. Simmer until slightly thickened.
  7. Stir in grated Parmesan cheese until melted.
  8. Nestle cabbage wedges back into the skillet, spooning sauce over them.
  9. Cover and bake for about 45 minutes; then uncover and bake for an additional 15–20 minutes until tender.
  10. Let rest for 5 minutes before serving.
