  • 1/4 cup Cilantro

Instructions

  1. Roast the poblano peppers over an open flame or under a broiler until charred. Cover them to steam for 10 minutes.
  2. In a large pot, heat olive oil and sauté diced onion, celery, and garlic until softened.
  3. Peel and chop the roasted peppers; add them to the pot along with diced potatoes, cumin, red pepper flakes, salt, pepper, and broth. Stir well.
  4. Bring to a boil then simmer uncovered until potatoes are tender.
  5. Add chicken chunks and cook until fully done. Stir in cream until combined.
