Ingredients
- 3 tablespoons olive oil
- 1 pound ground beef
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 5 cloves garlic, minced
- 3 cups tomato sauce
- 4 cups chicken stock
- 15 ounces fire roasted tomatoes
- 1 tablespoon Italian seasoning
- 1 cup dry pasta (ditalini)
- 15 ounces red kidney beans, drained and rinsed
- 15 ounces cannellini beans, drained and rinsed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup fresh parsley, chopped finely
Instructions
- Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat. Add the ground beef and cook until browned. Remove and drain excess fat.
- In the same pot, add remaining olive oil and sauté diced onions, carrots, and celery until softened (about 5 minutes).
- Stir in minced garlic for 30 seconds until fragrant.
- Add chicken stock, tomato sauce, fire-roasted tomatoes, Italian seasoning, cooked meat, and ditalini pasta; stir well.
- Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes or until pasta is al dente.
- Stir in both types of beans and cook for an additional few minutes.
- Season with salt and pepper to taste; garnish with chopped parsley before serving.
