- ¾ cup water
- 4 teaspoons un-iodized salt
- 1 teaspoon sugar
- ¾–1 pound whole okra (washed)
- 4 cloves garlic
- 2 bay leaves
- Fresh dill sprigs
Instructions
- Prepare two pint-sized glass jars by placing two garlic cloves and one bay leaf in each jar. Pack in the okra pods, alternating ends.
- In a saucepan, combine vinegar, water, salt, and sugar; bring to a boil over medium heat. Stir in black peppercorns and red pepper flakes until dissolved.
- Carefully pour the hot brine over the packed okra in each jar, filling them about half an inch from the top.
- Allow jars to cool at room temperature before sealing tightly with lids.
- Refrigerate for at least five days before enjoying.
