Ingredients

Scale
  • 20 g fresh yeast or 1 packet (7g) active dry yeast
  • 1 cup (240g) warm milk
  • 2 cups (250g) flour
  • 2 large eggs
  • 1/4 cup (50g) sugar
  • 1/4 teaspoon cinnamon
  • 5 small/medium soft apples

Instructions

  1. Warm the milk to about 100-110°F (38-43°C). Combine with yeast and 1 tablespoon of sugar; let sit for 10 minutes until foamy.
  2. In a large bowl, mix the foamy yeast mixture with flour, eggs, remaining sugar, cinnamon, and salt using an electric mixer until well combined.
  3. Cover and let rise in a warm place for 45-70 minutes until doubled in size.
  4. Prepare apples by peeling and dicing them into small cubes; fold them into the batter.
  5. Heat oil in a non-stick pan over medium heat. Drop spoonfuls of batter into the pan and cook until golden brown on both sides.
