  • 1 medium sweet potato, diced
  • 1 ripe avocado, sliced
  • 2 hard-boiled eggs
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • tsp cumin
  • tsp smoked paprika
  • Salt & pepper to taste
  • 1 tsp olive oil, for roasting

Instructions

  1. Preheat oven to 400F (200C). Toss diced sweet potatoes in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  2. In a skillet over medium heat, add olive oil and cook the ground meat until browned (around 5-7 minutes). Stir in tomato paste, cumin, smoked paprika, salt, and pepper; simmer for 2-3 minutes.
  3. Assemble your bowl by layering cooked ground meat at the bottom followed by roasted sweet potatoes. Top with sliced avocado and halved hard-boiled eggs.
