  • 3 tbsp soy sauce or Worcestershire sauce
  • 4 cloves garlic, minced
  • 8 whole garlic cloves, peeled

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the lamb shoulder dry and season generously with salt and pepper.
  3. In a small bowl, mix honey, soy sauce (or Worcestershire sauce), and minced garlic until well combined.
  4. Place the seasoned lamb in a roasting pan and pour half of the glaze over it. Add whole garlic cloves around the lamb.
  5. Cover with foil and roast for about 2 hours, basting every 30 minutes with the remaining glaze. Remove foil in the last 30 minutes for caramelization.
  6. Check doneness using a meat thermometer; aim for at least 145°F (63°C). Let rest covered loosely with foil for 15-20 minutes before carving.
