Instructions
- Season both sides of the beef chops with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the beef chops for 4-5 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté the sliced onions for about 5 minutes until softened, then add minced garlic and cook for an additional minute.
- Pour in chicken broth and Worcestershire sauce, scraping up any browned bits from the pan. Stir in thyme and smoked paprika; bring to a simmer.
- Return beef chops to the skillet, spooning sauce over them. Cover and simmer on low for about 10 minutes.
- Remove chops and stir butter into the sauce until melted and well combined. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
