Instructions

  1. Season both sides of the beef chops with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the beef chops for 4-5 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté the sliced onions for about 5 minutes until softened, then add minced garlic and cook for an additional minute.
  4. Pour in chicken broth and Worcestershire sauce, scraping up any browned bits from the pan. Stir in thyme and smoked paprika; bring to a simmer.
  5. Return beef chops to the skillet, spooning sauce over them. Cover and simmer on low for about 10 minutes.
  6. Remove chops and stir butter into the sauce until melted and well combined. Adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
