  • 1 tablespoon taco seasoning
  • 10 flour tortillas (10-inch)
  • ¼ cup unsalted butter
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 400°F and prepare a 9×13 inch baking dish with cooking spray.
  2. In a medium bowl, mix together shredded chicken, diced tomatoes, green chiles, taco seasoning, and ¾ cup of Monterey Jack cheese.
  3. Melt butter in a saucepan over medium-low heat; stir in flour to form a roux. Gradually whisk in chicken broth until smooth; remove from heat and stir in sour cream.
  4. Spread some sauce on the bottom of the baking dish. Fill each tortilla with about ½ cup of the chicken mixture, roll tightly, and place seam-side down in the dish.
  5. Cover enchiladas with remaining sauce and sprinkle with cheese. Bake uncovered for about 20 minutes until bubbly.
