- 1 1/2 cups dark chocolate chips
- 1 cup sugar
- 1/4 cup dark brown sugar
- 3 eggs, at room temperature
- 1 tsp espresso powder (optional)
- 2 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 20 oz semi-sweet chocolate chips
- 1 tbsp coconut oil
- 1 cup powdered sugar
- 2–3 tbsp heavy cream
- 1 package candy eyes
Instructions
- Preheat your oven to 350°F and line a 9 x 9 inch cake pan with parchment paper.
- Melt dark chocolate chips and butter in a microwave-safe bowl until smooth.
- Whisk in sugars until dissolved, then mix in beaten eggs, espresso powder (if using), and vanilla extract.
- Gradually add flour, cocoa powder, baking powder, and salt; fold in remaining chocolate chips.
- Spread the batter evenly in the pan and bake for 25-30 minutes until a toothpick comes out with moist crumbs.
- Cool brownies completely before cutting them into squares.
- For the coating, melt semi-sweet chocolate chips with coconut oil; dip each brownie to coat fully and let set in the fridge.
- Prepare bandage icing by mixing powdered sugar with heavy cream; pipe onto brownies and add candy eyes.
