Ingredients
- 800g strawberry purée
- 760g sugar
- 20g pectin
- 10g tartaric acid
- 2 tsp Tabasco
- 50g caster sugar
Instructions
- In a large pan, combine strawberry purée with 720g sugar and bring to a boil over medium heat.
- In a mixing bowl, mix pectin with the remaining 40g sugar; add this mixture to the boiling purée.
- Use a thermometer to ensure the mixture reaches 104ºC, then remove from heat and stir in tartaric acid and Tabasco.
- Line a baking tray with cling film or nonstick spray; pour in the jelly mixture and refrigerate for at least four hours until set.
- Once set, cut into squares and roll in caster sugar before serving.
