- 1 cup unsalted butter, very softened
- 1 egg, at room temperature
- 3/4 cup granulated sugar (total including for dough and filling)
- 1/2 tsp vanilla
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup granulated sugar, for rolling dough in

- In a mixing bowl, beat cold cream cheese with sugar and vanilla until smooth. Set aside.
- Dice fresh strawberries and mix with sugar; let sit for 10 minutes.
- Cream butter and sugar together until fluffy. Add egg and vanilla; mix well.
- Combine flour, baking powder, baking soda, and salt in another bowl; gradually add to wet mixture.
- Fold in diced strawberries gently.
- Preheat oven to 350°F (175°C). Shape dough around a teaspoon of cheesecake filling and roll in sugar.
- Bake for about 11 minutes until edges are golden.
