Ingredients

Scale
  • 1/2 cup unsalted butter (softened)
  • 1 1/4 cups granulated sugar
  • 3 large egg whites (room temperature)
  • 1 large egg (room temperature)
  • 2/3 cup whole milk (room temperature)
  • 3-ounce package strawberry-flavored vegan gelatin powder
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour (sifted)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup unsalted butter (softened) for frosting
  • 1/4 cup heavy cream or whole milk for frosting
  • 2 teaspoons vanilla extract for frosting
  • 1/8 teaspoon fine sea salt for frosting
  • 4 cups confectioners' sugar (sifted) for frosting
  • 12 Golden sandwich cookies (cream filling removed) or crushed shortbread cookies
  • 1 cup freeze-dried strawberries (lightly crushed)
  • 4 tablespoons unsalted butter (melted and cooled) for crunch topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch round baking pans.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until smooth. Add egg whites one at a time, then mix in the whole egg.
  3. Stir in the whole milk, strawberry gelatin powder, and vanilla until well combined.
  4. In another bowl, whisk together the sifted flour, baking powder, baking soda, and salt. Gradually add to the wet mixture until just mixed.
  5. Divide batter between prepared pans and bake for about 25 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting: Beat softened butter with heavy cream until fluffy. Gradually add confectioners’ sugar, then stir in vanilla extract and salt.
  7. Assemble by frosting one layer of cake, placing the second layer on top, and frosting the entire cake.
  8. For the crunch topping: Combine crushed cookies and freeze-dried strawberries with melted butter; sprinkle over the frosted cake.
