  • 2 1/2 cups peaches (peeled and sliced)
  • 1 cup sliced strawberries
  • 1/4 cup brown sugar
  • 3 teaspoons cornstarch
  • 1/3 cup water
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine oats, brown sugar, flour, and cinnamon. Pour in melted butter and mix until crumbly.
  3. Spread half the mixture into a greased 9×9 baking pan.
  4. Layer sliced peaches and strawberries evenly over the crust.
  5. In a small saucepan, combine the remaining brown sugar, cornstarch, salt, and water over medium-high heat. Stir continuously until thickened.
  6. Remove from heat and stir in vanilla extract; pour syrup over the fruit layer.
  7. Sprinkle the remaining topping mixture over the fruit.
  8. Bake for about 35 minutes until golden brown. Optional: Broil for an additional 2-3 minutes for extra crispiness.
