  • 4 cups pitted and chopped cherries
  • 1/2 cup fresh lemon juice
  • 1 cup allulose
  • 2 teaspoons Pomona's Universal Pectin
  • 2 teaspoons calcium water (included in pectin box)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Prepare your jars by washing them thoroughly and placing them in a water bath canner filled halfway with water. Bring to a rolling boil then turn off the heat.
  2. Heat lids and bands in a small saucepan of simmering water until ready to use.
  3. If using fresh cherries, pit them; if using frozen, measure directly into a saucepan.
  4. Combine cherries with lemon juice and calcium water; blend well.
  5. In a separate bowl, mix allulose and pectin together.
  6. Heat the cherry mixture on medium heat, mashing as needed until desired consistency is achieved. Bring to a boil.
  7. Add the pectin-sweetener mix while stirring continuously for 1-2 minutes until dissolved. Boil for one additional minute.
  8. Fill jars up to ¼ inch from the top, clean rims, place lids on top and twist bands until finger-tight.
  9. Process jars in boiling water for 10 minutes (add one minute per additional 1,000 feet above sea level).
  10. Cool jars undisturbed for 24 hours; check seals afterward.
