  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba (for frosting)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine dairy-free milk and apple cider vinegar; let sit for 5 minutes.
  3. In another bowl, whisk together self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Add sunflower oil to the milk mixture, then combine with dry ingredients until just mixed.
  5. Pour batter into liners and bake for 20-25 minutes or until a toothpick comes out clean. Let cool completely.
  6. For frosting, beat dairy-free butter and icing sugar until fluffy; add aquafaba until smooth.
  7. Frost cooled cupcakes and decorate with ground Oreo crumbs and melted dark chocolate.
