  • 1 yellow onion, chopped
  • 1 pound boneless skinless chicken breasts or thighs
  • 4 cloves garlic, chopped
  • 2 poblano peppers, seeded and chopped
  • 4 cups broth
  • 4 ounces cream cheese
  • 1 can white beans, drained
  • 1 can (4 ounces) diced green chilies
  • ½ cup salsa verde
  • 1 pound short cut pasta
  • 2 cups shredded melty cheese (colby, cheddar, or pepper jack)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large pot over medium-high heat, melt the butter or heat olive oil. Add the onions and chicken; cook until browned.
  3. Stir in garlic, poblanos, and spices; cook until fragrant.
  4. Add broth and simmer until chicken is cooked through. Shred the chicken once done.
  5. Add pasta with water; bring to boil and simmer until al dente.
  6. Stir in cream cheese until smooth; mix in shredded chicken, beans, green chilies, salsa verde, and half of the cheese.
  7. Top with remaining cheese and bake for 5-10 minutes until bubbly.
