Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast. Add warm milk and softened butter; knead until smooth (about 8 minutes). Shape into a rectangle, cover with plastic wrap, and refrigerate for 30 minutes.
  2. Flatten chilled butter between parchment sheets into a rectangle about half an inch thick.
  3. Roll the dough into a rectangle twice the size of the butter block. Place the butter on one half; fold over and seal edges tightly. Perform three to four folds, chilling for 30 minutes between each fold.
  4. Roll laminated dough into a rectangle (12×18 inches) and cut into rectangles (3×6 inches). Place chocolate on one end and roll tightly.
  5. Proof shaped croissants on a baking sheet for 1–2 hours at room temperature.
  6. Preheat oven to 400°F (200°C). Brush croissants with egg wash made from whisked egg and milk before baking for 18–20 minutes until golden brown.
