Ingredients
- 3 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons salt
- 1 tablespoon instant yeast
- 1 cup warm whole milk
- 2 tablespoons unsalted butter, softened
- 1 1/4 cups chilled unsalted butter (for laminating)
- 1 cup high-quality dark or semi-sweet chocolate bars or sticks
Instructions
- In a large bowl, mix flour, sugar, salt, and yeast. Add warm milk and softened butter; knead until smooth (about 8 minutes). Shape into a rectangle, cover with plastic wrap, and refrigerate for 30 minutes.
- Flatten chilled butter between parchment sheets into a rectangle about half an inch thick.
- Roll the dough into a rectangle twice the size of the butter block. Place the butter on one half; fold over and seal edges tightly. Perform three to four folds, chilling for 30 minutes between each fold.
- Roll laminated dough into a rectangle (12×18 inches) and cut into rectangles (3×6 inches). Place chocolate on one end and roll tightly.
- Proof shaped croissants on a baking sheet for 1–2 hours at room temperature.
- Preheat oven to 400°F (200°C). Brush croissants with egg wash made from whisked egg and milk before baking for 18–20 minutes until golden brown.
