  • 2 Tbsp avocado oil
  • 1 cup diced boneless skinless chicken breasts
  • 1/2 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1 tsp minced fresh ginger
  • 1 cup fresh pineapple chunks
  • 3/4 cup thawed frozen peas and carrots
  • 3 cups cooked jasmine rice
  • 2 Tbsp reduced sodium soy sauce
  • 1 Tbsp oyster sauce
  • 2 green onions (diced)

Instructions

  1. Gather all ingredients and prepare them by dicing the chicken and chopping the vegetables.
  2. Heat 1 tablespoon of avocado oil in a wok over medium-high heat. Add diced chicken with salt and pepper; stir-fry until golden brown and cooked through (5-7 minutes). Remove and set aside.
  3. In the same pan, add another tablespoon of avocado oil. Sauté onion, garlic, and ginger until fragrant (about 3 minutes).
  4. Add pineapple chunks and thawed peas and carrots; stir for another 2-3 minutes until heated through.
  5. Stir in cooked jasmine rice along with soy sauce, oyster sauce, and sesame oil. Mix well until everything is combined and heated through.
  6. Garnish with diced green onions before serving hot.
