  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil

Instructions

  1. Wash and dry the strawberries and cucumbers. Hull the strawberries and slice them into bite-sized pieces. Thinly slice the cucumber into rounds or half-moons.
  2. In a small bowl or jar, whisk together the lemon juice (or balsamic vinegar), honey (or maple syrup), olive oil, salt, and pepper. Adjust seasonings to taste.
  3. In a large mixing bowl, combine the sliced cucumbers, strawberries, herbs, and optional cheese if desired.
  4. Drizzle half of the dressing over the salad mixture. Gently toss to coat without crushing the fruit.
  5. Transfer to a serving platter and sprinkle with your choice of nuts/seeds and additional herbs if desired. Drizzle with remaining dressing before serving.
