Ingredients
- 2 tablespoons avocado oil
- 1.5 lbs boneless, skinless chicken breasts, diced
- 1 small red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small head broccoli, cut into small florets
- 1 (20 oz) can pineapple chunks
- ¼ cup pineapple juice
- ¼ cup rice apple vinegar
- ⅓ cup soy sauce or tamari
- 1.5 teaspoons sesame oil
- 2 tablespoons arrowroot powder
Instructions
- Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Add diced chicken and cook until browned and fully cooked. Remove chicken from the pan.
- In the same pan, heat remaining avocado oil and add the diced onion, bell peppers, and broccoli. Stir-fry until tender-crisp.
- While veggies cook, whisk together reserved pineapple juice, rice apple vinegar, soy sauce or tamari, sesame oil, and arrowroot powder in a bowl until smooth.
- Return cooked chicken and pineapple chunks to the pan with vegetables. Pour the prepared sauce over everything and stir well to combine. Cook until sauce thickens.
