  • 2 tablespoons avocado oil
  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small head broccoli, cut into small florets
  • 1 (20 oz) can pineapple chunks
  • ¼ cup pineapple juice
  • ¼ cup rice apple vinegar
  • ⅓ cup soy sauce or tamari
  • 1.5 teaspoons sesame oil
  • 2 tablespoons arrowroot powder

Instructions

  1. Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Add diced chicken and cook until browned and fully cooked. Remove chicken from the pan.
  2. In the same pan, heat remaining avocado oil and add the diced onion, bell peppers, and broccoli. Stir-fry until tender-crisp.
  3. While veggies cook, whisk together reserved pineapple juice, rice apple vinegar, soy sauce or tamari, sesame oil, and arrowroot powder in a bowl until smooth.
  4. Return cooked chicken and pineapple chunks to the pan with vegetables. Pour the prepared sauce over everything and stir well to combine. Cook until sauce thickens.
  5. Serve hot over rice or quinoa, garnished with sesame seeds.
